Dinner in a Pumpkin! This is something I think we're going to have as a tradition in our home every Halloween season. It's not too hard and is fun to make and eat. We've made it the last 2 years. But, it makes a lot of food so make sure you invite someone over if your family is only made of 2 people like ours!
1 chopped onion
1 and 1/2 to 2 pounds ground beef
2 T soy sauce
2 T brown sugar
4 oz. can of sliced mushrooms, drained
1 can cream of chicken soup
1 and 1/2 to 2 cups cooked rice
1 8oz. can of sliced water chestnuts, drained.
1. Clean out a pumpkin (small-medium size, see our picture)
2. Brown burger in a big skillet or pot and drain; add onions and simmer for a couple minutes
3. Add everything else to your skillet/pot and mix
4. Put the mixture into the pumpkin
5. Put the pumpkin in the oven; Bake at 350 degrees for 1-1 and 1/2 hours until pumpkin is tender.

We do this each year for Halloween too. Our favorite part is the color of the pumpkin after it is baked. :)
